Paleo kangaroo-mince pie topped with pumpkin & cauliflower mash
Looking through my blog I realised that the majority of the recipes I share with you are for those with a sweet-tooth, so this time I decided to acknowledge how delicious a healthy, hearty home-cooked meal can be. I absolutely love cooking my dinner from scratch every night using wholefoods, fresh vegetables, high-quality meats and spices. I don’t follow a strict paleo diet (some paleo diets exclude dairy, cheese and other foods which I love) but I do follow a paleo diet for the most-part… I try to lead a grain-free, gluten-free and refined sugar-free lifestyle.
Since living in Australia my love for cooking with kangaroo meat has grown massively… well I’d never even tried it before moving here! It’s great just as a simple steak (cooked medium-rare to stop it becoming tough), as a burger, or even as a sausage. The best part about the meat is how lean it is – contains less than 2% fat.
This recipe is shepherd’s pie (using kangaroo mince) with a pumpkin and cauliflower mash… and it is so delicious! A perfect meal to cook and share with your family.
500g kangaroo mince
1 brown onion, finely chopped
2 cloves garlic
1 red pepper (capsicum), finely chopped
2 carrots, finely chopped
1 corn on the cob (corns removed)
coconut oil (for frying)
passata (or chopped tomatoes) – make sure you find a brand with no added sugar
1 tsp chilli flakes
1 tsp paprika
1 tsp mixed herbs
1/2 head of cauliflower
Salt/pepper for seasoning
Heat coconut oil in pan and then add onion and garlic to sauté.
Add kangaroo mince with chilli, paprika and herbs and cook until meat is almost cooked through.
Add red pepper (capsicum), carrots, corn and passata to the pan. Warm through and then remove from heat and transfer into oven-proof dish.
Bring pumpkin and cauliflower to the boil.
Once cooked, add both to food processor with a knob of butter (or coconut oil) and blend with seasoning until a creamy texture forms.
Place mash on top of kangaroo mince mixture and spread evenly to the edges.
Bake in oven for 30-40 minutes.
