Avocados… they have got to be one of the most talked-about foods of the moment. And so they should be! They are bloody delish. But why are they becoming so popular – are they really that healthy?
Answer: yes. Why don’t you ‘avo’ seat and I’ll explain.
Avocados are rich in monounsaturated fatty acids (mostly oleic acid) which has been shown to lower cholesterol and protect against cardiovascular disease by decreasing high blood triglyceride levels. But the story doesn’t end here. They are also an excellent source of Vitamins K, E and C, potassium, fibre, folate and more.. the list goes on!
I think we can all agree on the health benefits of this exceptional fruit, so the real question is: what is the best way to eat them? I want to share with you 5 of my favourite avo recipes which I honestly don’t think I could live without:
The classic: avo smash on toast
Nothing can beat this simple dish which can be eaten for brekkie, lunch, dinner or even as a snack! Just combine half an avocado with some lime juice, salt, pepper and chilli and add it to your toast… et voila!
Chocolate avocado mousse
I actually use an excellent I Quit Sugar recipe for this delicious, satiating dessert which you can find here.
Baked avo eggs
An excellent high fat breaky to keep you feeling full until lunch! Take half an avocado, scoop out some of the flesh from the centre and crack an egg into the hole. Bake in the oven until the egg is cooked through (about 15 mins).
The perfect Mexican side dish – mash an avocado and add salt, pepper, fresh coriander, chilli flakes and lime juice. Enjoy with chilli con carne or nachos… mmmmmm!
Blended into a smoothie
Adding half an avocado to a smoothie instantly gives it a creamy texture without the added need for dairy. You really can get experimental here – add it into a green smoothie with an apple, spinach, kale and ginger, or add it into a banana smoothie with berries, spinach and almond milk. The possibilities are endless… just give it a go!
