By now you've probably realised that I am well and truly obsessed with avocados. Which is why this dessert makes me so bloody happy! Yep, that's right... it's a dessert with avocado. Don't knock it before you try it... this dessert may sound disgustingly weird but I promise you it will be life-changing (or at least it was for me).
With just 4 simple ingredients, this recipe is not only quick and easy to make but it is also nutritionally dense (believe it or not!) How? Avocados are rich in healthy monounsaturated fats as well as being an excellent source of Vitamins K, E, C and potassium - you can read more about the health benefits of avocados here.
The Naked Chocolat I used in this recipe is a blend of cacao (rich in magnesium, iron, copper, manganese, riboflavin and other essential micronutrients for health and vitality), maca (rich in zinc, iron, calcium, magnesium, thiamine, riboflavin, vitamins C and E) and carob (good source of soluble fibre, it naturally helps to regulate blood sugar levels and helps lower cholesterol). So, as you can see, this pudding is FULL of nutritional goodness.
The best thing about this pudding, besides the fact that it contains avocado (and who doesn't love avocado) and is nutrient-dense, is how simple it is to make. No long list of ingredients because ain't no one got time for that. It is also very easily adjustable - if you like things sweet, add a bit more rice malt syrup. Or if you prefer a rich chocolate flavour, add less rice malt syrup. Or if don't like chocolate orange, try it with mint or lime. The world is your oyster with this pudding!
RECIPE (serves 2)
- 1 avocado
- 2 tbsp cacao (I used Naked Chocolat from the Healthy Chef)
- 1/4 cup rice malt syrup
- zest of 1/2 orange
- 1 tsp greek yogurt (optional)
1) Add all ingredients together in a food processor and blend until thick, creamy and smooth.
2) Divide between two serving bowls.
3) Top with orange zest and cacao nibs and serve with a slice of fresh orange.
