I'm sure we've all had those moments where you've just baked a whole loaf of banana bread and you end up eating half of it all in one go.... because it tastes so goddamn good fresh from the oven it'd be rude not to, right?! But then how many of us regret doing so only a few hours later... definitely me!
If that sounds like you then this recipe is for you! Single serve recipes means there ain't no going back for seconds ... because there isn't any! It also means you don't have to share your dessert - winning! Plus, if you want to track your macros then it's easy to do so with this recipe using an app such as My Fitness Pal... just put in each ingredient separately et voila!
Recipe (serves 1)
- 1 banana, mashed (approx. 80g)
- 1 egg
- 20g brown rice flour
- 1 tsp baking powder
- 1 tsp vanilla essence
- 1 tsp coconut sugar
1) Pre-heat oven to 180 degrees and line a small loaf tin with baking paper (or any small ceramic dish)
2) Add all ingredients in a small mixing bowl and mix to combine
3) Pour mixture into tin and bake for 20 minutes (or until a skewer comes out clean)
Yep... it really is that simple! 3 steps and literally 5 minutes to prepare so it is perfect when you fancy something sweet after dinner. I topped mine with some delicious fresh passionfruit for an extra zing and paired it with some coconut ice-cream... delish!
