Now, I know what you're thinking. Chickpea flour?! I'm sure we've all seen raw cookie dough recipes using blended chickpeas... but chickpea flour? Yep! Just you wait...
Chickpea flour is a great gluten-free alternative to regular flour and it is also higher in protein. I've used it before in Indian cooking (onion bhaji's mmmmm) but I decided to give it a go with something sweet and I was not disappointed!
Originally I was going to bake banana bread... and then I realised I didn't have any bananas, so that was a bit of a fail. Hence these cookies were created. They were baked, taken to a friend's BBQ and demolished within 30 seconds of being served (literally).
You can buy chickpea flour from most normal supermarkets (I got mine in Woolworth's - Australia) but it can also be called 'gram' flour so keep your eyes peeled!
