Who doesn't love a gooey, chocolatey delicious dessert?! (Correct answer: no one).
I occasionally find that brownies can be a little bit toooooo rich, so these blondies are perfect for those moments. Plus, anything made with cashew butter is obviously going to be insanely good, right?!
They are sweetened with raw Skinny Sugar which is a blend of sugar and erythritol, bakes exactly like normal sugar with less than half the calories! But if you don't live in Australia or you can't find anything similar then you can just use coconut sugar instead.
This recipe creates 8 LARGE blondies or 16 smaller ones - I prefer to make them smaller because then they last longer (haha jokes I wish). But I do prefer to make them smaller, just to TRY and maintain an element of portion-control. It's hard though, trust me.
